Anina Culinary Art has created an innovative system that redesigns fruit and vegetables into edible capsules.

The system sees fresh fruit and vegetables labelled as "abnormal" transformed into intricately patterned capsule shells designed to be cooked in water to produce a healthy and sustainable meal.

Various cutting and drying techniques are used to create the capsules' repetitive patterns and geometrical shapes, turning raw materials that were considered unattractive for consumer distribution into products with high aesthetic value.

Anina's capsule shells are made from dried vegetables, which contain and protect additional healthy food ingredients such as legumes, grains and spices. The capsules are cooked in water for several minutes, gradually disintegrating and transforming into a healthy, sustainable and multi-textured meal.

This project has been longlisted in the product design category of Dezeen Awards 2022.
